Strawberry Banana Pancakes

DELICIOUS!

Did I make them?  NOPE lol my sister did.  She made this awesome stack that was WAY more than I would normally eat in a serving but aaahhhmazing! They were so good I had to share!


Pancakes
*1 cup almond meal/flour
*1/4 cup whole wheat flour
*1/2 cup part skim ricotta
*1 egg
*2 egg whites
*1 cup almond milk
*2 tbsp ground flax seeds
*1.5 tbsp light brown sugar

Add all the dry ingredients together.  Then in a separate bowl add all the wet ingredients except for the egg whites.  Fold together the wet and dry ingredients but not too much! Then add egg whites to bowl to make it fluffy! Cook on med--low heat.  Set aside

Topping
*1 cup frozen strawberries
*1 large banana
*1/2 cup plaingreek yogurt
*1 tbsp light brown sugar
*1.5 tsp truvia
*about a tsp vanilla extract

To make the topping freeze the greek yogurt for a bit.  Cut up the strawberries and add to a pan over low heat with vanilla extra and brown sugar until it makes a syrup.  Then add strawberry mixture to greek yogurt along with truvia.  Layer strawberry yogurt mixture and bananas on pancakes and enjoy!


So the batch made about 10.  They were about 117 calories each.  The topping she split between the two of us and was about 146.  Ahhh so many cals! lol I had 3 with the topping...so my plate was just under 500 calories
