Buffalo Cauliflower Bites

What you'll need

cauliflower
1/2 cup oats
1/2 cup almond milk
garlic powder
paprika
oregano

Lemon Blueberry Coconut Muffin Bites

What you'll need
*100% Whole Grain Old Fashioned Oats, 1/2 c 
*Unsweetened Shredded Organic Coconut, 4 tbsp
*Baking Powder, 1 tsp
* Frozen Wild Blueberries, 1/4 c

*Pure Lemon Extract, 1 tsp 
*2 large eggs
*Agave Organic Sweetener, 1 Tbsp
*About Time - 100% All Natural Whey Protein Isolate - Vanilla, 1 scoop
*Greek Nonfat Yogurt, 1/8 c

1.)Preheat oven to 350 degrees
2.)Blend all ingredients except for the blueberries together (I used a magic bullet)
3.) Stir blueberries into batter
4.) Grease muffin tin (I used coconut oil)
5.) Add batter and bake until golden brown (took about 15 mins)

Low Carb Cake Cakes



Whoa!  Its been a while since I've posted anything.  Need to get back to it!

These don't look like much but they're EVERYTHING! Lol you all know how much I LOVE pancakes. Well recently I've been back to counting my macros. I used to count macros but not closely. This time around I've been on it! 100% and I'm definitely noticing a difference...especially with my core. Anyhoo, I'm allowed a lower carb count then I'm use to and my normal oat flour pancakes just won't do. So b
ehold. Low carb "cake cakes" as Sawyer calls them lol

Pumpkin Almond Flour Puffins

 Theeerrrreee back...PUFFINS!  That's right! Pancake Muffins.  I was looking for a way to use the left over pureed pumpkin.  So...these happened.  They don't look like much but they were yummy.



The reciepe was found at pbfingers. It was used to make regular pancakes however I like things that are easy to take on the go if needed =)

Fail to Prepare, Prepare to Fail

This past Saturday our refrigerator was on E! So we ventured out for a shopping trip. 



 On Sunday I planned to wake early and spend the day barefoot in the kitchen lol

Did I make them?  NOPE lol my sister did.  She made this awesome stack that was WAY more than I would normally eat in a serving but aaahhhmazing! They were so good I had to share!

Breakfast Pizza


INGREDIENTS:

* Whole wheat pita
* 1/2 a ripe avocado
* Low sodium turkey bacon
* 1 large egg


Toast the pita bread, mash 1/2 the avocado on the pita, cook the turkey bacon and the egg to your liking.... viola! easy as pie...a pizza pie =)

Pumpkin Pudding



Ok so I do experiment SOMETIMES.  It was right before fall and I was craving some pumpkin! So i whipped up this treat and loved it!  Could have fed two probably...but I was being WAY greedy

*note* I dont remember exactly how much cinnamon I used...but I dont think it was actually a tbsp.  season to taste!

Single Ingredient Ice Cream

Ummm....only the EASIEST treat to make ever!! If your a fan of nanners like me you'll love this!!

Step 1: Slice some banana
Step 2: Freeze those banana slices
Step 3: Place in food processor and pulse until nice and creamy

DONE! lol just that simple. You'll want to make sure they're nice and ripe so they're sweeter.  And if you want to snazz it up a bit throw in some nut butter and cocoa powder!!


I made some for my sister and me and set some aside without almond butter and cocoa powder for our daughters.  They loved it!!

Turkey Paninis W/ Sun Dried Tomatoes




INGREDIENTS:

  • 1 whole-wheat baguette, cut crosswise in fourths (I used a whole grain baquette)
  • 12 sun-dried tomatoes (packed in olive oil), patted dry and halved
  • 2 oz part-skim mozzarella cheese, thinly sliced
  • 6 1-oz slices reduced-sodium fresh deli turkey
  • 1 1/2 cups arugula leaves (I used spinach leaves)

INSTRUCTIONS:

  1. Split open baguette sections and layer each bottom half with 6 pieces tomato, 1/2 oz cheese, 1 1/2 slices turkey and top half of bread. Toast sandwich on a countertop grill or panini press on medium heat, lid down, until lightly browned, about 6 minutes. If using stovetop method, toast about 3 minutes per side, or until lightly browned.
  2. As soon as paninis are done toasting, open each and add 1/3 cup arugula. Slice each panini on the diagonal and serve immediately.

Whole Wheat Puffins!!



INGREDIENTS:

2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon sea salt
1 1/2 cup almond milk
2 eggs
1/3 cup melted butter
1 cup frozen blueberries
3 slices cooked turkey bacon

**I also added a couple servings of stevia, ground cinnamon and vanilla extra to this mix..i didnt measure...eep! lol) play around with yours**

Mix dry ingredients together.  Add almond milk, eggs and melted butter. 
Pour batter into 18 buttered muffin tins. I  divided the blueberries and cut up turkey bacon to the muffin tins at this time ( 9 for each).  Bake at 350° for 15-20 minutes or until the muffins are lightly browned.

Spinach and Turkey Sausage Pizza




INGREDIENTS:

  • 6 oz spinach leaves
  • 1 14.5-oz can, no-salt-added diced tomatoes, drained
  • 1 whole-wheat thin pizza crust
  • 2 fully cooked turkey sausages 
  • 3 oz part-skim mozzarella cheese, grated (about 3/4 cup)

INSTRUCTIONS:

  1. Preheat oven to 450°F.
  2. Coat a skillet with cooking spray and heat on medium low. Add spinach and cook until wilted, about 4 minutes. Season with pepper, to taste. Remove from heat and set aside.
  3. Place 1 cup tomatoes in a fine mesh strainer and press out as much liquid as possible. Spread tomatoes onto pizza crust. Top with spinach, sausage and mozzarella. Bake 10 minutes, or until sausage is lightly browned and cheese is melted. Rest pizza on a cutting board for 5 minutes, slice into 6 equal pieces and serve.

This recipe was found on cleaneatingmag.com It called for chicken sausages but I used the turkey ones we had instead...delish!! One of my fav quick dinners
